Would you like a bite of this leafy greens raspberry salad with goat cheese?
Salads are a quick and light-weight lunch. That doesn’t mean that they can’t be satisfying and delicious at the same time. We hope that today’s salad prep inspires you to experiment more with your salads. Just follow this simple rule: The more color, the better!
As you can see in the photo, the base for this salad consists of leafy greens; arugula & red baby swiss chard. The toppings are goat cheese, raspberries, pine nuts & garden cress. The dressing is made by simply muddling some raspberries with white balsamic vinegar, oil, salt and Mediterranean herbs. If you have the time, try doing the dressing from scratch. The two things that make this salad especially delicious are the homemade dressing and the slightly roasted goat cheese.
Sweet raspberries are a great contrast to the bitterness of arugula and baby red swiss chard. Pine nuts & roasted goat cheese add a nutty flavor to it. Lastly, the white balsamic vinegar dressing provides the acidity for a fresh aftertaste. You can pair the salad with a glass of dry honey wine. The one from Meadery Jere was refreshing, with a hint of sweetness. Overall, a really good combination for a light summer lunch!
