The famous Mousse au Chocolat is one of the most beloved chocolate desserts of all time. However, what&#8217;s underneath the mousse makes this dessert truly well-balanced and beyond delicious &#8230;<\/p>\n\n\n\n<p><strong>So what is this dessert all about? <\/strong><\/p>\n\n\n\n<p>We are preparing a chocolate mousse on a bed of cherries cooked in mead. When cooking cherries in honey wine, the wine will turn into a thick, naturally-sweet cherry sauce. On top, there will be a scoop of a bitter-sweet mousse, which is light and full of air bubbles. <\/p>\n\n\n\n<p><strong>Ingredients for 4 portions:<\/strong><\/p>\n\n\n\n<p><strong>Honey wine cherries :<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>500g cherries<\/li><li>2dl semi-sweet floral mead from <a href=\"https:\/\/jere-eu.com\/en\/product\/semi-sweet-mead-05l\/\" target=\"_blank\" rel=\"noreferrer noopener\">Meadery Jere<\/a>.<\/li><\/ul>\n\n\n\n<p><strong>Chocolate mousse:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>200g of 70% cacao dark chocolate\/coating chocolate<\/li><li>1 egg (60g)<\/li><li>2 egg yolks (40g)<\/li><li>40g of sugar<\/li><li>400g of whipping cream<\/li><li>2 gelatine sheets<\/li><\/ul>\n\n\n\n<figure class=\"wp-block-image size-medium\"><img decoding=\"async\" width=\"300\" height=\"300\" src=\"https:\/\/jere-eu.com\/wp-content\/uploads\/2020\/08\/mousse-au-chocolat-ing-300x300.jpg\" alt=\"Mousse au Chocolat with cherries and Mead Jere\" class=\"wp-image-21000\" srcset=\"https:\/\/jere-eu.com\/wp-content\/uploads\/2020\/08\/mousse-au-chocolat-ing-300x300.jpg 300w, https:\/\/jere-eu.com\/wp-content\/uploads\/2020\/08\/mousse-au-chocolat-ing-150x150.jpg 150w, https:\/\/jere-eu.com\/wp-content\/uploads\/2020\/08\/mousse-au-chocolat-ing-12x12.jpg 12w, https:\/\/jere-eu.com\/wp-content\/uploads\/2020\/08\/mousse-au-chocolat-ing-100x100.jpg 100w, https:\/\/jere-eu.com\/wp-content\/uploads\/2020\/08\/mousse-au-chocolat-ing.jpg 388w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/figure>\n\n\n\n<p><strong>Let&#8217;s get right into it!<\/strong><\/p>\n\n\n\n<p><strong>Step 1:&nbsp;<\/strong>Start off by breaking the <strong>chocolate<\/strong> into smaller pieces and melting it in a water bath (50\u00b0C).<\/p>\n\n\n\n<p><strong>Step 2:<\/strong> Beat the egg, egg yolks and sugar over a water bath (80\u00b0C) until they gain volume and turn frothy. Soak the gelatine in cold water. Fold the&nbsp;<strong>liquid chocolate<\/strong>&nbsp;into the egg mixture. Gently wring out the gelatine to get rid of excess water, melt it in a pot, and add it to the mixture while constantly stirring. Place it into the fridge for 5 minutes.<\/p>\n\n\n\n<p><strong>Step 3:<\/strong>\u00a0While the egg mixture is cooling off, whisk the <strong>whipping cream <\/strong>until firm peaks form. Take the egg\/chocolate fusion out to the fridge and add the cream by gently folding it into the mixture. Do not overmix. Leave in the fridge until firm (min. 3 hours, best overnight).<\/p>\n\n\n\n<p><strong>Step 4: <\/strong>Wash the <strong>cherries<\/strong>, slice them in half, and remove the stones. Place them in a small pot and pour in the mead as well. Cook on low heat for 10 minutes. In the end, the cherries will be soft and covered with a thick, naturally sweet cherry-mead sauce. Refrigerate. <\/p>\n\n\n\n<p><strong>Important:<\/strong><\/p>\n\n\n\n<p>Before plating, make sure you&#8217;ve already invited someone to try this with you. If not, there may be a risk of you eating it all by yourself! <\/p>\n\n\n\n<p>As stated in the title: &#8220;If you love cherries, mead, and chocolate, you will be making this dessert over and over&#8221;. The bitterness in the chocolate and the acidity of cherries balance out the sweetness incredibly well.
